The research done on Multiple Intelligence (MI) Theory supports the need for and usefulness of integrating the arts into adult literacy classroom. 

The September 2002 (Issue 15) edition of "The Change Agent:  Adult Education for Social Justice:  News, Issues and Ideas" is called, "Focus on Creativity and Change."  It contains articles and lesson plans on using the arts as a vehicle for social change education in the classroom.  It is available on-line at http://www.nelrc.org/changeagent.
